HARDY CELESTE
DESCRIPTION
One of the most beloved trees in the traditional southern home garden, Celeste Fig is also known as Blue Celeste, Sugar Fig and Brown Honey Fig... the traditional names all reflect some regional affection for the wonderfully sweet fruit. Despite its southern roots, Celeste has proven to be the finest fig available for consistent crops of sweet juicy figs even in northern gardens and in containers. Celeste produces many small to medium-sized figs that ripen to a light violet-brown exterior with a reddish interior. The small fruits are very sweet, as the common names suggest, and can be easily dried. The closed "eye" on these figs helps prevent wasp/insect damage. When southern customers tell us they are looking for "the fig that my grandmother had in her yard" or when cooks say they want the small fig that can be preserved whole, we almost always know that they are seeking Celeste. This is an excellent, hardy fig for the southern and mid-Atlantic states. It grows into a large, hardy tree with very large, visually striking leaves. Because the smaller figs ripen early, this is also a good choice for areas with shorter summer seasons. (016)

The story [is] this 80 year old woman's grandfather brought a small tree over from Italy. He kept the tree alive with water from his canteen while traveling by boat from Italy to New York. Yellow top and purple/red lower skin with red/honey flesh. Large obique pyriform shaped fruit. Habit: Large round top spreading tree. Figs will begin to bear fruit after 3-5 years. Size: 4 - 5 metres. Harvest: First crop or breba figs form on last years, growth and will not grow until spring. These ripen December- January depending on site and variety selected. Second crop figs form during the summer growing season and ripen in the Autumn, from late March to May. To enhance development of late crop figs tip the new shoots to 4 or 5 leaves in mid December. Hmadi (probably from the Hebrew word hamuts which means acid) was also described by Grasovsky and Weitz. It is a small fig with a sub-acid flavor "very much relished by the fellaheen [RG--an Arabic term for peasants]." Around the town of Taibe the farmers grow, even today, the Hmadi figs. It seems that they specialized in this variety and during summer, they produce relatively large nice looking green figs decorated with strong red lines. The taste is good and refreshing. So if you wish to eat some Hmadi figs, during season, all you have to do is to drive north on Road 444. When you approach Taibe look carefully to your right and you will see a few booths that sell figs. Don't hesitate! Buy at least 1 kilogram of those fine reddish Hmadi figs. Who knows? You might even return home with a few left in your bag. (006f)

It was brought to the US by a Syrian friend. It grows on the mountains around Damascus, Syria. The climate there is dry, with long summer and cold winter.
