The Sbayi, which means "spotted" in Arabic, is the second main crop fig in Israel. It was first described by Grasovsky and Weitz in 1932.(The purple ribs are a distinguishing characteristic.) It is sweet and good for fresh consumption. Israeli experts consider it second only to Khurtmani in taste, aroma, and quality in Israel. It has never been imported into the United States. (006f)

SEQUOIA
DESCRIPTION
Sierra makes a large tree while Sequoia is substantially smaller and would be easier to manage in the greenhouse. They are both productive and good tasting, with a good tight eye that helps to exclude various insects from entering the interior of the fig fruit. Sierra has light amber/pink meat inside while the Sequoia is a nice strawberry/red color that is more attractive fresh. Sierra makes an exceptional dried product but is has a less attractive interior color. The skin of both varieties is quite durable. (1001) Sequoia has a patent pending. (910) Sierra, as of 2019 has been a slow ripenr and ripens late. (910)

SHTAWI
SEE: LEBANESE BS
DESCRIPTION
Shtawi (Stav means autumn in Hebrew) is a very late fig grown in Samaria (modern West Bank) and the Galilee. Also described by Grasovsky and Weitz. One advantage to this fig is the almost-closed eye which might make it suitable for humid areas like the American South. They did not, however, describe its quality and productivity.(006f)

SLEEPING GIANT
DESCRIPTION
This is a fig ... that didn't bear until 30 years after I planted it. It is a greenish yellow fig and the red flesh tastes like strawberry jam. The fig set was tremendous. It is a light brownish-yellow fig with light copper colored stripes and med in size. Again, it is one of the best tasting figs I have eaten. The moral of this story is to never give up on a fig. It will always remain a mystery as to why it took 30 years to bear. (910)JR

SOUTHERN BROWN TURKEY
DESCRIPTION
[I]n Mississippi, a medium-sized, light-brown fruit that ripens over a 60-day period. Brown Turkey may be the more desired variety in areas where fig plants frequently freeze to the ground, since Brown Turkey can produce a fair crop on young growth. It has a mild, sweet flavor. The eye is moderately closed and this helps to reduce fruit spoilage on the tree. The plant is vigorous, large, and productive. (010) This is the classic Brown Turkey variety common to the Deep South. Large purple-brown figs are delicious and sweet with light red colored flesh. A tough and productive tree that is easy to grow in warm, humid environments. (1158)

STELLA
DESCRIPTION
The Stella fig may be the same as the Adriatic (which I have, but not for long either). According to their catalog One Green World took a local cutting and named it Stella. Their catalog photo of the leaf and fruit resembles the Adriatic, and this variety is popular and does well in that area, so it seems to add up. (907)

SULTANE
SYN: SULTANA (016), GROSSE DE JULIET (016), DARK SULTANE (089)(016), NOIR DE JULIET (016)
DESCRIPTION

A productive pear shaped fig from Sollies in southern France. Medium to large, skin blue black shading to brown around the stalk. Flesh red. (089) Very sweet, reminiscent of Hardy Chicago and Celeste.(016) Sultane (occasionally listed as Sultana, Grosse de Juillet, Noir de Juillet) has rapidly become one of the favorite figs at our nursery. The fruits are small plump figs, between Celeste and Brown Turkey in size with a dark maroon color and a delightful, rich almost nutty flavor. Wonderful as an appetizer stuffed with a sharp cheddar or blue cheese! The rapid-growing trees have a pleasant upright shape with minimal suckering. Sultane fruits early and promises to be another good fig for gardeners who have a shorter hot summer season. We obtained this from nursery colleagues in UK, the original fig from Sollies Ville in southern France. The fruits have proven to be excellent for drying, even drying on the tree during dry fall months. (016)
